....we had an old favorite we had forgotten about. Black bean and BBQ shrimp burritos. Super simple too. Thaw already cooked and cleaned medium sized shrimp. Heat black beans. Saute shrimp in pan on stove until hot. Warm tortillas and fill with black beans, shrimp and cheese and drizzle your favorite barbeque sauce (we love Sweet Baby Rays) over all of it and wrap up like a burrito and serve with spanish rice on the side. Blake made just a bean and cheese burrito, but Kaia tried it for the first time and thought it was super yummy!
If you want to add a veggie to it, the restaurant we copied the recipe from used spinach. I don't like cooked spinach....so I leave it out. The BBQ sauce and black beans together is seriously a little taste of heaven!
