One of our favorite Sunday snacks. Dump Salsa. It is so easy and is a real crowd pleaser!
Dump Salsa
2 cans of Rotel Mild Diced Tomatoes & Green Chilies
1 can black beans
1 can white beans (or pinto beans)
2 avocados diced
Bag of Tortilla Chips
Dump all in medium bowl. I do partially drain the cans of beans. And sometimes if I don't have the Rotel Tomatoes I just use a large (24 oz) container of mild salsa already in my fridge. Enjoy!
BROTHER UPDATE!
Jason is doing well. He took a shower and shaved and is carrying on complete conversations. I asked him if he felt anything cognitively was compromised and he said he felt the same. Yay! He was transferred from San Francisco today to our local hospital for Acute Rehabilitation for one week. It will be nice to have him closer. He also was able to see his kids today and they decorated his room for him! We will go visit later today. He asked me to bring him a new beanie for his head. They removed his bandages so the incision can heal. I'm glad he will wear a beanie for the kids and myself because I don't think I could handle seeing all the staples in his head. Just the thought of it makes me feel weak and the need to lay down! I am such a wimp when it comes to unnatural things happening to the body. Natural childbirth I can totally handle. Give an episiotomy and I faint!
It will be good to see him later today.

SO glad to hear about your brother doing so well.
Also so glad there is someone else who gets the "natural blood/childbirth = A-OK, episiotomy/epidural/needle in general=chance of fainting."

ReplyDeleteThank you for keeping us updated on your brother. He is in our thoughts and prayers. I don't think there are many people out there whose lives haven't been affected by someone they love dealing with cancer. So many of my young friends have had a brush with one form or another.
The salsa looks awesome, especially those chunks of avacado - YUM!
